Tasting Notes

The 2016 Spitfire, a true super Tuscan style wine, is a perfectly balanced blend of 57% Sangiovese and 43% Cabernet Sauvignon. Aromatics of ripe Maraschino Cherry, fresh fig and grenadine with hints of dried cranberry are followed by integrated layers of sweet oak. Lush and generous on the entry, the mid-palate is rich and vibrant with refined tannins and lively acidity on the finish. Enjoy now through 2027.

Winemaker Notes

Each element of our 2016 Spitfire comes from Reserve designated blocks on our estate vineyard. Each lot was fermented in small 2-ton fermenters, our extraction for our Sangiovese was gentle with only punchdowns 2-3 times per day. The Cabernet Sauvignon portion received more frequent punchdowns and pump overs for optimal extraction. The wines where then aged exclusively in French oak with 20% being new oak, 50% 2-year-old, and 30% neutral oak. For the first 3 months of aging, the lees were gently stirred in each barrel to help create roundness and balance of the wines. Aged for approximately 16 months, the wine was gently racked from barrels to tank. After all the chemistry was in, we decided this wine was healthy and remained unfiltered allowing the wine to be enjoyed right away and still have the ageability to cellar for the next 9-10 years.
