Winemaker Notes

Pinot Gris grapes belong to the same family of Pinot Noir, and the grapes themselves are actually red grapes. When creating a white wine from these grapes, harvesting in the cool early hours of the morning is critical. When creating a rosé, it is not as crucial. Harvested at optimal maturity then gently pressed, the wine was sent to stainless steel fermenters and allowed to cold settle for 72 hours before being racked off its lees to begin fermentation. Fermented at cool temperatures around 58-60 degrees maintains the freshness and lovely fruit characteristics of the Pinot Gris Grape.
